Huacatay, also known as Peruvian black mint, wild marigold, southern marigold, Aztec marigold, is a pungent herb from the marigold family essential in Andean cuisine, used to flavor sauces like ocopa and aji verde, and dishes like pollo a la brasa (Peruvian roast chicken)It has a unique, strong flavor often described as minty with spicy and earthy notes, and is available fresh, dried, or as a paste, though it can be hard to find outside of Latin American markets.
